All about Cava

Cava is one of Spain’s best known and best loved sparkling wines, or vinos espumosos, and alongside Rioja is one of the country’s most successful wine exports. Cava is a premium product, but over the last decade or so it has perhaps been overshadowed by the likes of Prosecco and other, more cheaply made, but more aggressively marketed, sparkling wines. So, what’s special about Cava and why should you give it more than a second look? Read on to find out more.

Cava grapes

A range of grapes can be used to make Cava but three varieties reign above them all.

    XAREL-LO

    High in alcohol and acidity Xarel-lo produces wines with intense aromas and flavors, notably of earthy or herbal character.

    MACABEO

    Cava producers like Macabeo because it's good at absorbing secondary flavours from lees contact while the wine is being made in the winery.

    PARELLADA

    Pale in colour, light, fresh and aromatic on the palate with floral and white fruit notes. This grape is appreciated for its low alcohol and a good acidity.
