All about Cava

Cava is one of Spain’s best known and best loved sparkling wines, or vinos espumosos, and alongside Rioja is one of the country’s most successful wine exports. Cava is a premium product, but over the last decade or so it has perhaps been overshadowed by the likes of Prosecco and other, more cheaply made, but more aggressively marketed, sparkling wines. A range of grapes can be used to make Cava but three varieties reign above them all.

    XAREL-LO

    High in alcohol and acidity Xarel-lo produces wines with intense aromas and flavors, notably of earthy or herbal character.

    Cava producers like Macabeo because it's good at absorbing secondary flavours from lees contact while the wine is being made in the winery.
