DO Cava
Cava is a Denominación de Origen in its own right, but unlike the wines from Spain’s other DOs, Cava is not made in just one geographical area.
Cava grapes
A range of grapes can be used to make Cava but three varieties reign above them all.

XAREL-LO
READ MOREHigh in alcohol and acidity Xarel-lo produces wines with intense aromas and flavors, notably of earthy or herbal character.

READ MORECava producers like Macabeo because it's good at absorbing secondary flavours from lees contact while the wine is being made in the winery.

PARELLADA
READ MOREPale in colour, light, fresh and aromatic on the palate with floral and white fruit notes. This grape is appreciated for its low alcohol and a good acidity.
